Mathieu has now left the business and Pierre Olivier continues the domaine located in the centre of Nuits Saint Georges. Pierre Olivier owns a few parcels of vines and he buys from like minded growers that farm sustainably. Pierre Olivier believes that vineyard health is synonymous with a balanced ecosystem which explains the chickens used to
