Quince started as a Lagerbier, similar to the base of Sunsets, which we then finished in oak with our Side Project mixed culture. Once mature, we allowed it to re ferment on Illinois grown Quince (sourced by LC member Will Bresnahan!) from the 2020 and 2021 harvests.
